Curry is awesome 😀 The chemistry of cooking is actually very complicated compared to the stuff I do! There are thousands of different chemicals in food and they all mix and react together in a complicated way which we don’t always understand very well!
We do know a few things though – certain chemicals are responsible for certain flavours and colours. The molecule that makes things spicy is called capsaicin, and the molecule that makes tumeric so yellow is curcumin. I like my curry with lots of capsaicin! 😛
